Born of a simple conviction: that gathering well is a craft worth protecting.

1790 began as a question shared between friends at a long table in Columbia County. Where, they asked, could a person of discerning taste dine without spectacle, host without compromise, and converse without interruption? The answer, they decided, did not yet exist. So they built it.

The name draws from a year — a quiet nod to the era when private societies first defined what it meant to belong. We carry that lineage forward, not as nostalgia, but as a standard. Every detail, from the sourcing of our produce to the cadence of an evening, is measured against a single question: would this honor those who have chosen to belong here?

We are intentionally small. Membership is intentionally selective. The room is intentionally quiet. These are not limitations — they are the architecture of an experience the public dining room can never replicate.

I have spent twenty-five years in rooms where the meal was perfect and the moment was not. Service without warmth. Privacy without grace. Exclusivity without purpose. 1790 is my answer to all of it.

We will not be the loudest table in Columbia County. We will not chase trends, court press, or measure ourselves against any room that is not our own. We will, however, know your preferred wine, anticipate the timing of your evening, and treat every member as the honored guest they are.
